Another handy dandy tool for the fisherman or woman is the Kershaw 7 Step Adjustable Fillet Knife. Yes, you can adjust this knife to the size of the fish you want to fillet for a quick and easy job. Or you can adjust it to a length you feel comfortable with when filleting just about any kind of fish.

The blade is made from 420J2 stainless steel and can be adjusted from 5 ½ inches in length to 9 full inches in length. This high carbon stainless steel is long lasting and will keep it’s sharpness after repeated uses. The length can be adjusted in half inch increments. The comfort designed blade is made from non-slip injection molded polymers so it will last in the coldest or warmest climes.

The 7 Step Adjustable Fillet Knife is made in Japan and comes in at a surprisingly lightweight 3.5 ounces. The knife also comes with an ABS sheath.
